Taleggio DOP cheese
Taleggio is one of the oldest soft cheeses, traditionally produced in autumn and winter. During production, the curd is taken to the dairy and traditionally stored on wooden shelves in rooms and caves. To prevent mould growth, the cheese is washed once a week with seawater. It is aged for 6-10 weeks, developing a thin rind. The cheese has a strong aroma, while its flavour is relatively mild with unusual fruity notes. Taleggio can be served grated over salads. Since it melts well, it is also suitable for risotto or polenta.
